Wensleydale

A Yorkshire dale, the valley of the river Ure, known for its cheese as well as its beauty (Wensley is one of the villages). By the early 19C Wensleydale was a general name for cheese from any of the neighbouring dales. In the 1890s production began in a central creamery at Hawes, the first of several factories to produce the white and flaky variety now known as Wensleydale. By the late 1950s none was being made by the traditional method in farmhouses.
