Welsh rabbit

Toast with cheese on it, which is heated under a grill until it flows over the edges. The dish was known under this name from the early 18C, when a very similar dish was called a Scotch rabbit. It is not known in what sense they were rabbits; perhaps it was a joke at the expense of regional cuisine, too poor to afford even real rabbit. The version 'Welsh rarebit' is a later attempt to explain the improbable name.
