The only one of the original ketchups (spicy sauces used as condiments for meat or fish) to have survived as an everyday feature of British life, used particularly now with fried fish and chips. The word 'ketchup' is a variant of a Chinese term for a brine of pickled fish; it entered the language in about 1700. In past centuries mushrooms and walnuts were the most popular ingredients for ketchup.
