White wine from Portugal's Atlantic island of *Madeira, fortified with brandy for its travels. In 18–19C Britain it was as popular as the closely related *port. The madeira cake, of plain or lemon-flavoured sponge and served now with tea, was originally a favourite accompaniment to a glass of Madeira.
