Seaweed which is sold already boiled to a spinach-like purée. Once popular all round Britain's coasts, it has now become a speciality of Wales; it is usually cooked with oatmeal in hot flat cakes, or is spread on toast. Laver is the common name for Porphyra, a seaweed much eaten in many parts of the world, particularly in the Far East.
