Highly esteemed in Scotland as the national dish. It consists of minced offal of sheep or calf, mixed with oatmeal, suet and seasoning, cooked and served in the skin of the animal's stomach. It is the invariable dish of honour at any *Burns Night celebration. Traditionally an object of horror to *Sassenachs, those who dare sample it usually find it more palatable than expected.
